Difference bet Traditional, Simplified & Romanized?  XML

I was looking at the cantonese phrasebooks and noticed that there were 3 versions of traditional, simplified and romanized.

I speak a little cantonese myself, but I didn't know what are the differences between these 3 versions?

These 3 are different styles of written chinese.
Romanized is just when you spell chinese words as they sound in latin symbols.
